Lunch from the garden
I recall my mother sending me to the garden to pick tomatoes, onions, cucumbers and an assortment of herbs and other vegetables. She would chop onions and potatoes and sautee them until they are almost tender and would diced tomatoes over them. She would also fix a vegetable plate of tomatoes, radishes and diced cucumbers to go with the dish. We would sit around the table and eat it with freshly baked bread and green olives.
This was summer food at its best. All of it from the garden and prepared quickly to sate our hunger.
It was good then and it is still good food. We try to recreate it every now and then to my children, but it never tastes the way my mother used to make it.
